Chinese Fried Rice

While I don’t eat carbs, I still cook a couple staples that my kids and friends love. Here’s one of the recipes.
I don’t bother with quantities because the “Magic” of this recipe is timing, just use logical quantities of the ingredients to taste. I put an * next to what steps I think makes this work so well.
Ingredients
- Basmati Rice
- Peas
- Corn
- Diced Chicken
- Soy Sauce
- Himalayan Salt
- Garlic Powder
- Onion Powder
- Olive Oil
Process 1: Chicken
- Heat the plan
- Add olive oil
- Put diced chicken in
- Immediately put in salt/garlic/onion
- Cool partially
- Add soy
- Fully cook
- Add defrosted peas/corn
- Simmer
Process 2
- Cook Rice: use only 75% of the water you normally would, as you want the rice a little undercooked*
- Heat a pan with olive oil
- Put the rice in the pan
- Immediately add salt/garlic/onion
- Pan fry for a couple minutes, lots of stirring
- Add soy, mix thoroughly but quickly, and take off heat*
Process 3
- Merge everything
- Get off of heat
